I'm a 20-something foodie with a true passion for cooking and a love for photography.  My blog "Eat Yourself Skinny" started because I wanted to show that eating right and maintaining a healthy lifestyle could actually be fun!  I love to put a spin on classic favorites by substituting calorie-loaded ingredients with healthier alternatives that still taste delicious.

Mini Pumpkin Swirl Cheesecakes

Mini Pumpkin Swirl Cheesecakes 04


Here are your ingredients:
Recipe adapted from GingerbreadBagels

Crust
7 graham cracker sheets
1/2 tsp. ground cinnamon
2 Tbsp sugar
4 Tbsp unsalted butter, melted

Cheesecake Mixture
8 oz. Cool Whip Free
1 (8 oz) package fat-free cream cheese
1/4 cup sugar (or 6 Splenda packets)
2 tsp. vanilla extract

Pumpkin Mixture
1/3 cup pumpkin puree
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground ginger
1/8 tsp. allspice

In a food processor, grind up the graham cracker sheets into fine crumbs.  {If you don’t have a food processor or blender, place the graham crackers into a bag and crush them with a rolling pan or a cup.}  Place the graham cracker crumbs into a bowl and add in the ground cinnamon and sugar.  Melt the butter and add it to the graham cracker crumbs.

Line a cupcake pan with cupcake liners and put one tablespoon of the graham cracker crumb mixture in the bottom of each liner.  Press down the crumbs with your hand.  Set aside.
In a large bowl, whip the cream cheese, vanilla extract and sugar (or Splenda) for a few minutes until fluffy.  Add the Cool Whip and whip until smooth.  To make the pumpkin mixture, combine the pumpkin puree, ground cinnamon, ground nutmeg, ground ginger and allspice.  Add 2/3 cup of the cheesecake mixture to the pumpkin mixture.  Stir with a spatula until the two batters are completely combined and there are no lumps.

Using a cookie dough scooper (or spoon), fill each cupcake liner with 1 1/2 scoop fulls of the cheesecake mixture.  Each liner should be filled almost to the top.  Now place three dots of pumpkin batter onto the cheesecake batter in the liner.  I used a 1/4 teaspoon to scoop the pumpkin batter.  Use a toothpick to swirl the two batters.

Once each cheesecake cup is swirled, placed the cupcake pans into the fridge to chill for a few hours (I chose to keep mine in overnight) until firm.  Serve and enjoy!

Why I Choose to Dress Modestly

When you turn on the television, go to the movies, or flip through the pages of just about any magazine, it appears that our society has lost the value of modesty. 

People dress in clothing and styles that are designed to reveal and to bring considerable attention to their bodies.

When I choose to dress modest I believe it sends a message of purity and honor. 

It shows that I have self-respect and self-control over my body. 

When I dress modestly, I am saying that I posses inner qualities for which I should gain appropriate attention and value from others. 

I dress in a way that will always please my Heavenly Father and show Him that I respect that the body that He has given to me.


The Bible places a high priority on modesty. In 1 Timothy 2:9 , for example, it teaches that Christian women are to dress modestly. They are to focus on their inner attractiveness rather than being overly concerned about outward appearance. 

Modesty also demonstrates self-control, which is a fruit of the Holy Spirit

Sunday Inspiration

This morning I had the opportunity to listen to Elder Bednar speak at Stake Conference.
What an amazing experience!
The spirit was so strong and my heart is completely full.

In his talk he explained that we should take upon ourselves the name of 
Jesus Christ, always remember Him and keep His commandments.
Once we do this we then move from being our own individual agent to a representative of Jesus Christ.

He also talked about always evaluating our lives daily, knowing we who are in Christ and finding ways to be a better person, showing Christ's love unto others and making a constant effort to draw closer to our Heavenly Father.

We always should turn to Him not to ourselves, and represent Him in all times and in all places.

Elder Bednar then left us with one question to continually ask ourselves..

Which way are YOU facing? 
Are you always turning towards the Lord?
or...
 Are you turning towards yourself?

That's What Friends Are For

I love about Fall.....

The Crisp Cool Air
I love stepping outside in the morning and breathing in the nice cool crisp air.
It's a nice change from this Arizona weather.

Thanksgiving
 What a better way to celebrate than a giant meal with all your loved ones around? I love Thanksgiving.

Comfort Food
When the temperatures start to dip, that's when comfort food starts to taste extraordinarily yummy.

Fall Attire
When I think of fall clothing, I think comfy and warm.
There is nothing better than wearing a chunky oversized sweater, some leggings and some boots!
