COOKING WITH KIMBERLY & PAOLA: EASY BLUEBERRY LOAF


Today we are so excited to share this recipe 
with you because it's so easy and tastes so good!

I found this recipe on my friend Laura's blog 
who got it from her friend. We just had to try it!


What You Need: 

*Baking loaf pan
*Big bowl to mix all the ingredients

*2 eggs
*1/4 tsp salt
*1 cup milk
*3 cups of all purpose flour
*1 1/2 cups white sugar
*4 tsp baking powder
1/2 cup vegetable oil
*1 tsp vanilla extract
*3 cups fresh blueberries




Preheat the over to 350 degrees

Grease a loaf pan

Mix flour, sugar, baking powder, and salt in a large bowl. 





Stir milk, oil, egg, and vanilla extract into
 flour mixture until batter is just blended.






Fold in all the blueberries


Pour into prepared loaf pan

Bake in preheated oven until a toothpick
 comes out clean, about 75-90 minutes.


Cool for 15-20 minutes and enjoy!!

COOKING WITH KIMBERLY AND PAOLA: WATERMELON SMOOTHIE TO DIE FOR





This is Paola's recipe. Funny thing is, when she told me it was a watermelon smoothie, I told her I don't like watermelon. I know.... I know!! Everyone like watermelon right?!?! Well I have to tell you that when I tried THIS smoothie, I finished it within minutes and then asked if I could have another!

INGREDIENTS



Serving: 10 glasses

  • 1 Watermelon - Make sure it is ripe and sweet 
  • 1/2 of a small lime
  • 1 bag of Frozen strawberries - I love the Kirkland brand from Costco
  • Agave

This beverage is packed with Vitamin C, Vitamin A, Vitamin B6,
Vitamin B1, Lycopene, Potassium, Folate, Fiber and antioxidants. 

 
PREPARATION





Now start adding your frozen straberries and make sure you put on the lid on your blender. 
Otherwise you will have watermelon all over your walls! 



Note: Sometimes the frozen strawberries are a little sour and not ripe. You can always add some Agave to the smoothie while blending it. Add agave to taste. The frozen strawberries at Costco are super sweet and then you never have to add any sugar to your smoothie.




Now sqeeze and add your lime juice and keep on blending! 




Dont you love the color of this drink? It literally smells like candy!


Paola made quite the feast! She made some yummy white rice with cilantro, onion and garlic.
Some super sweet platains with some melted cheese and guava paste coated over the top, and some chicken (Pollo sudado) with casava or "Yuca" and a side salad! 

  


Everyone gave a big thumbs up to this lovely meal.

Even little Logan looks happy and loves his mama's cooking.

Birthday Wish List

My birthday is in just a couple of weeks (October 3rd) 

I will be turning 28. 

Perfect time to put together a wish list... which technically is more of a “wishful thinking” list. Nonetheless, I would be beyond thrilled to receive any of these items on my special day.

Bonham's Lasagna

This is a recipe I created through experimentation.

I took a regular easy Lasagna recipe and spiced it up a little!

 It turned out so yummy the first time around so I just had to share it with you.
 
This is a recipe that will make enough for a large family gathering!

Kind of like the large family gatherings we have every Sunday....

Yup all 34 of us! So much fun and so much love!





Ingredients:
1 package of lasagna noodles
1-1/2 jars of thick spaghetti sauce
1 large chopped onion
1 large container of Ricotta cheese
1 small container of curd cottage cheese
1/2 tsp. of cracked black pepper
2 cups of mozzarella cheese
2 packages of mushroom slices

Choose 3 kinds of meat.
We used Italian sausage, meatballs, and pepperoni slices.

1 lb. of Italian sausage cooked and chopped into small pieces
1 lb. of ground beef or meatballs cooked and chopped into small pieces
1 package of pepperoni slices


Instructions:
Preheat oven to 375
Saute' onions and mushrooms in butter or EVOO.
Combine Ricotta, cottage cheese and cracked black pepper. Stir.
Cook noodles, rinse in cold water, drain and separate. Set aside.
In a large deep non-stick baking pan, layer bottom with spaghetti sauce, about two cups.
Place a layer of noodles, then sauce until lightly covered, then a thin layer of your cheese mixture, meats, sauteed onions and mushrooms.
Complete this process until you have used up all your meat, cheese mixture, and onions and mushrooms.
When you lay your last layer of noodles, place a think layer of sauce and sprinkle mozzarella cheese on top.
Bake at 375 uncovered (about 30-40 minutes) and until the top is golden brown and bubbly.
