this recipe I found on Pinterest and made for lunch yesterday.
It's super easy, healthy, easy to digest, so delicious!
I have taken the challenge to make most of my diet RAW.
What is a Raw Diet you ask?
Raw foodism (or rawism) is a lifestyle promoting the consumption of uncooked, unprocessed, and often organic foods as a large percentage.

Ingredients:
1 avocado
1 Cup of fresh corn
1 Cup of fresh corn
Salt and pepper to taste
2-3 Tbsp seasoned rice vinegar
1-2 Tbsp chopped fresh dill, basil, or Thai basil*
1-2 large cucumbers peeled, quartered lengthwise, then sliced crosswise
Directions:
Combine all ingredients in a bowl, toss to coat.
Serves 2-4.

I love cucumbers! they're so refreshing and cucumber water is my favorite!
The recipe looks really good. I plan to make it. No one in my house would try it except my daughter. She loves to try new things. I will let you know how it turns out. I especially like the tips about cucumbers. I like them even more now.
